Water is life! Water is energy! Water is interdimensional! Water is timeless! Today, we're going to talk about alkaline water. Specifically, the awesome benefits of ionized alkaline water machines.

  • Are there any dangers to drinking ionized alkaline water? No. To date, there are no adverse effects recorded or proven. There are people that speculate, especially with the upward trend of drinking ionized alkaline water from a machine, but they have no scientific proof to back their claims.
  • Is the chemistry of the ionized water in a machine the same as getting it from a spring? Yes. Both get their alkalinity from alkaline mineral hydroxides. 
  • How soon after it comes out of the machine should I drink it? You can store it in a dark bottle to keep the pH levels up, but if not, drink it from a regular container within 24 hours after it comes out of the machine.
  • Were there studies conducted to back up the health benefits? Yes. As seen in the links above, independent studies were conducted in various countries. In fact, Japanese hospitals are equipped with alkaline machines that produce different pH levels of water. Over 20% of Japanese homes have ionized alkaline water machines.

Gluten-Free Pumpkin Spice Pancake


Good morning fam! Today, I'm going to share with you, my Vegan, Gluten-Free Pumpkin Spice Pancake recipe. ‘Tis the season for pumpkin! And you’re going to enjoy this vegan recipe, even if you're not a pumpkin eater or a vegan—it’s simple, healthy, and delicious!

Last year, during the fall (autumn) season and after I was done with my vegan clothing line, I was playing around with using pumpkin in a lot of my recipes; this was one of many that I came up with for the season. Pumpkin is a great ingredient to add to any food for health and for the holiday season. While creating my vegan pumpkin spice pancake recipe, I decided to make a gluten-free version, which required a slight adjustment, even with a 1 to 1 gluten-free flour. In this recipe, the ingredients consist of:

  • NO Animals (Meatless)
  • NO Dairy (Dairy-Free)
  • NO Eggs (Eggless)
  • NO Gluten
  • NO Granulated Sugar
  • NO Honey
  • NO Oils
  • NO Tree Nuts

Simplicity and taste, as well as health, were my focus in creating this recipe. We understand that not everyone aspiring to eat a vegan or plant-based diet is doing so for ethical reasons—at the end of the day, we’re all vegans and we're making the world a better place. To achieve that, teaching people how to make tasty foods is always helpful. 

To go a step further, my recipe goal is to keep the vegan/plant-based recipes as simple as possible with a short to medium list of ingredients that are easy to find and pronounce. So, if you don’t have these items already, get to the store right now and start shopping for them. You can also order your ingredients online.

Your Shopping List (4-7 ingredients)
  • Gluten-free 1 to 1 baking flour
  • Pumpkin puree (the only ingredient in the can should be pumpkin)
  • Rice milk (unsweetened; can have vanilla)
  • Pumpkin pie spice
  • Baking powder (not needed if you use gluten-free self-rising flour)
  • Sea salt (optional)
  • Maple syrup (optional)

Tools You Will Need
  • Nonstick griddle or frying pan
  • Spatula
  • Whisk
  • 2 Bowls (1 Medium and 1 Large)
  • Measuring cups & spoons

Directions:
  1. Turn the non-stick griddle on to 275 degrees Fahrenheit.

  1. Mix all dry ingredients in a large bowl:
    • 1 1/4 cups, gluten-free baking flour
    • 2 tsp, pumpkin pie spice
    • 2 tsp., baking powder (optional if have self-rising flour)
    • 1/4 tsp, sea salt (optional)

  1. Add the following ingredients to the medium bowl and use the whisk to mix well:
    • 1/3 cup, pumpkin puree
    • 1 3/4 to 2 cups, unsweetened rice milk
    • 1 tbsp., maple syrup (optional)

  1. Add the pumpkin mixture to the large bowl with the dry ingredients, then mix well with the whisk.

  1. Using 1/4 cup of batter per pancake, pour the batter onto the hot griddle or frying pan to make 10-12 pancakes.

  1. Serve with your favorite toppings and/or syrup. Enjoy!
