Simple Vegan Biscuit Recipes


What are we eating today? How about some delicious vegan butter biscuits or vegan coconut biscuits?! Cool? Okay. Now, if you want your biscuits to be gluten-free, you can substitute the flour for a gluten-free version. So, find your favorite gluten-free flour then come and join me in the kitchen.

These recipes are simple and easy to make. Unlike store bought biscuits that have a long list of ingredients with names you can't even pronounce, these biscuits have only 3 or 4 ingredients. Best of all, they're delicious, way healthier than the alternatives, and vegan. You can have these biscuits for any meal. That reminds me--a high protein gravy recipe would go nicely with biscuits. Let's save that idea for another blog post. Now, let's get started.


VEGAN BUTTER BISCUITS

Ingredients:

* I use the Earth Balance brand

Tools
  • Bowl
  • Fork (or mixer or pastry blender)
  • Rolling pin
  • Biscuit cutter (or an  empty can)
  • Cookie sheet


Directions
  1. Preheat the oven to 450℉.
  2. While the oven is heating, mix the salt and the flour together in a bowl.
  3. Use a fork or a mixer (or pastry blender) to mix the flour and butter.
  4. Add and mix increments of 1/4 cup of cashew milk to the flour until all the milk is gone. The dough will be sticky.
  5. Knead the dough, roll it in a ball, and then use the rolling pin to roll it out about 1/2 inch thick.
  6. Use a biscuit cutter or empty can to cut the biscuits out and place them on the cookie sheet. You may need to do #5 again with the remaining pieces until all the dough is gone.
  7. Bake biscuits for at least 15 minutes. Remove them from the oven, let them cool for a little bit, then enjoy!

VEGAN COCONUT BISCUITS
Ingredients:

**Try substituting 1/4 cup with coconut flour if you have any

Tools
  • Bowl
  • Fork (or mixer or pastry blender)
  • Rolling pin
  • Biscuit cutter (or an empty can)
  • Cookie sheet
Directions
  1. Preheat the oven to 425℉.
  2. While the oven is heating, use a fork or a mixer (or a pastry blender) to mix the flour and coconut oil in a bowl.
  3. Add and mix increments of 1/4 cup of coconut milk to the flour until all the milk is gone. The dough will be sticky.
  4. Knead the dough, roll it in a ball, and then use the rolling pin to roll it out about 1/2 inch thick.
  5. Use a biscuit cutter or empty can to cut the biscuits out and place them on the cookie sheet. You may need to do #5 again with the remaining pieces until all the dough is gone.
  6. Bake biscuits for at least 10 minutes. Remove them from the oven, let them cool for a little bit, then enjoy!
